Mashed Potato–Topped Meatloaf

Two favorite comfort food classic come together in one dish. Because the meatloaf is baked in a dish, rather than being freeform, the vegetables need to be cooked before being added to the meat mixture. This helps dry them out a bit helping to insure the meat loaf isn’t too wet.

  • 1 Tbsp. olive oil
  • 1/2 large onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • Kosher salt and freshly ground black pepper
  • 3 large eggs, divided
  • 1/2 cup plain Italian breadcrumbs
  • 1/3 cup frozen peas, thawed
  • 1/4 cup ketchup
  • 1/4 cup country Dijon mustard
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. dried oregano
  • 1/4 tsp. dried thyme
  • 1 lb. 90% lean ground beef
  • 2 lb. Yukon Gold potatoes, peeled and sliced 1/4 inch thick
  • 1/4 cup whole milk, warmed
    1. Step 1Preheat oven to 350°F with the rack in the middle position. Heat oil in a medium skillet over medium heat. Add onion and bell pepper. Season with salt and pepper. Cook, stirring occasionally, until tender and just starting to brown, 6 to 8 minutes. Cool to room temperature.
    2. Step 2Whisk 2 eggs in a bowl. Add breadcrumbs, peas, ketchup, mustard, Worcestershire sauce, oregano, thyme, and cooked vegetables and stir to combine. Season with salt and pepper. Add ground beef and season with salt and pepper. Use your hands to mix gently until combined. Transfer to a 9-by-5-inch loaf pan; smooth top. Bake 25 minutes.
    3. Step 3Meanwhile, bring potatoes to a boil in a large pot of salted water. Reduce heat and simmer until potatoes are tender, 10 to 12 minutes. Drain and return to pot. Mash potatoes. Cook over medium heat, stirring, until a film develops on the bottom of the pot, about 1 minute. Add milk and stir to combine. Add butter, a few pieces at a time, stirring until melted before adding more. Whisk remaining egg in a bowl. Add a small spoonful of potatoes and whisk to temper egg. Repeat 4 to 5 times. Return egg-and-potato mixture to pot and stir to combine.
    4. Step 4Remove meatloaf from oven and top with mashed potatoes. Bake until meatloaf is cooked through, 8 to 10 minutes. Switch oven to broil and broil until potatoes are starting to brown, 3 to 4 minutes. Let rest 5 minutes before serving.
